Only in this way can the taster go beyond a hedonistic assessment based on a \u00abI like \/ I don’t like\u00bb dichotomy and explain, with the greatest possible objectivity, why a certain wine has a particular flavour. This evaluation would be of the wine\u2019s intrinsic quality. However, if the wine tasting has been carried out within the scope of the fine dining gastronomic restaurant, then other extrinsic aspects, such as the wine\u2019s value for money, its evolution, ageing potential and suitability within the restaurant’s offer, would also need to be evaluated.
