La variaci\u00f3 en la dieta dels primers hom\u00ednids i tota la seva evoluci\u00f3 posterior \u2014amb la incorporaci\u00f3 de noves fonts energ\u00e8tiques han sorgit noves maneres de consumir els aliments\u2014 han contribu\u00eft, entre molts altres aspectes, al desenvolupament de l&#8217;\u00e9sser hum\u00e0. Per aix\u00f2, podem dir que la funci\u00f3 original i m\u00e9s significativa dels productes durant milions d&#8217;anys ha estat la d&#8217;exercir com a manteniment nutricional i \u00abaliment\u00bb de l&#8217;esp\u00e8cie humana. No obstant aix\u00f2, la nostra pretensi\u00f3 \u00e9s atorgar una nova funci\u00f3 als productes, entenent-los com un recurs per al restaurant gastron\u00f2mic, sense abandonar el seu significat original, per\u00f2 conferint-los una interpretaci\u00f3 diferent.<\/p>\n<p>L&#8217;elecci\u00f3 dels productes que conformen la nostra dieta, prefer\u00e8ncies alimentoses i usos que se&#8217;ls vol donar est\u00e0 condicionada per factors de tipus biol\u00f2gic, sociocultural, hed\u00f2nic, per\u00f2 tamb\u00e9 per la pr\u00f2pia composici\u00f3 del producte.<\/p>\n<h2>Una mar d&#8217;inc\u00f2gnites en espera de respostes<\/h2>\n<p>Quina difer\u00e8ncia hi ha entre una planta i una herba? Qu\u00e8 \u00e9s l&#8217;arr\u00f2s, un cereal o una llavor? Tots els cereals s\u00f3n llavors? Qu\u00e8 \u00e9s un producte fresc? I un cru?<\/p>\n<p>Aquests s\u00f3n nom\u00e9s alguns exemples del tipus d&#8217;interrogants que tractarem de resoldre. S\u00f3n consideracions que moltes vegades donem per assegurades i que en ser observades m\u00e9s enll\u00e0 de l&#8217;obvietat que sembla envoltar-les, ens permeten trobar curiositats que evidencien el desconeixement que existeix entorn d&#8217;aquestes. Comprendre el fenomen dels productes no elaborats d&#8217;una forma hol\u00edstica, implica transcendir l&#8217;\u00e0mbit de les necessitats m\u00e9s immediates per a situar totes les q\u00fcestions en un pla d&#8217;igualtat.
