Encara que s\u00f3n molts els que intenten aconseguir aquest objectiu, la realitat del m\u00f3n del vi \u00e9s que la majoria dels cellers usen t\u00e8cniques, eines i diferents productes enol\u00f2gics per a obtenir el vi que desitgen. Els coneixerem en aquest cap\u00edtol, juntament amb les t\u00e8cniques pr\u00e8vies a la fermentaci\u00f3: des del transport i la recepci\u00f3, al desrapat, rebregat, premsatge, desfangat i maceraci\u00f3 (encara que en el vi negre \u2014i algun blanc\u2014 aquest proc\u00e9s pot formar part tamb\u00e9 de la fermentaci\u00f3). Fases, totes elles, explicades amb detall, amb les seves classificacions i tipus.
