Aquesta obra q\u00fcestiona l&#8217;<em>statu quo<\/em> i, seguint la metodologia Sapiens, proposa una nova classificaci\u00f3 d&#8217;aquests compostos, aut\u00e8ntics engalipadors \u2014en el millor dels sentits\u2014 dels nostres receptors olfactoris (RO).<\/p>\n\n\n\n<p>Al llarg del cap\u00edtol intentarem donar resposta a una pregunta clau: com es formen els compostos odorants? A m\u00e9s, proposarem una nova classificaci\u00f3: compostos varietals, compostos prefermentatius, compostos fermentatius i postfermentatius.<\/p>\n\n\n\n<p>Tamb\u00e9 posarem l&#8217;accent en la percepci\u00f3 humana. Les limitacions de l&#8217;<em>Homo sapiens <\/em>fan que el nostre olfacte percebi els compostos de manera conjunta, no sent capaces en moltes ocasions de discriminar-los de manera individual i en funci\u00f3 del seu origen.
