{"id":16160,"date":"2023-07-25T12:36:09","date_gmt":"2023-07-25T10:36:09","guid":{"rendered":"https:\/\/elbullifoundation.com\/elbullistore\/?p=16160"},"modified":"2023-07-25T12:53:21","modified_gmt":"2023-07-25T10:53:21","slug":"que-es-cuina-i-com-es-cuina","status":"publish","type":"post","link":"https:\/\/elbullifoundation.com\/elbullistore\/ca\/que-es-cuina-i-com-es-cuina\/","title":{"rendered":"QU\u00c8 ES CUINA I COM ES CUINA?"},"content":{"rendered":"<h2>Hem vist alguns condicionants a l&#8217;hora de cuinar, per\u00f2 hi ha molts m\u00e9s<\/h2>\n<p>Partint de la mateixa base (producte, t\u00e8cnica, eina), l&#8217;acci\u00f3 de cuinar pot donar-se de milers de maneres possibles, en funci\u00f3 de criteris molt variats, entre els quals seleccionarem una s\u00e8rie per a mostrar aquesta evid\u00e8ncia en els casos en els quals hi ha una voluntat espec\u00edfica que guia al cuiner i que tractarem en les p\u00e0gines seg\u00fcents.<\/p>\n<h3>Comprendre i classificar els tipus de cuina \u00e9s complex, per\u00f2 no \u00e9s impossible si es planteja de la manera adequada<\/h3>\n<p>Al llarg de tota la seva hist\u00f2ria, en l&#8217;\u00e0mbit culinari s&#8217;han generat tipus de cuina molt diferents a mesura que s&#8217;han anat afegint determinades peculiaritats. Si els tipus de cuina responen a la pregunta de com s&#8217;ha cuinat, el m\u00e9s important seria saber quins criteris podem emprar per a ordenar-los millor i classificar-los. Aix\u00ed, serem capa\u00e7os d&#8217;analitzar-los en funci\u00f3 de la caracter\u00edstica o caracter\u00edstiques fonamentals que els hagin generat.<\/p>\n<h3>Un exemple de categories i de tipus de cuina, en aquest cas, segons el \u00abnombre de mossegades necess\u00e0ries per degustar l&#8217;elaboraci\u00f3\u00bb<\/h3>\n<p>Dedicarem aquest apartat per mostrar un exemple de classificaci\u00f3 que s&#8217;obt\u00e9 despr\u00e9s d&#8217;aplicar un criteri concret. Aix\u00f2 ens permetr\u00e0 centrar-nos exclusivament en la caracter\u00edstica que aquest produeixi en la cuina, que quedar\u00e0 estructurada en categories a partir de les quals podrem generar coneixement.<\/p>\n<h3>Reflexions sobre alguns tipus de cuina<\/h3>\n<p>Alguns tipus de cuina posseeixen noms propis que s\u00f3n molt coneguts, als quals s&#8217;associen una s\u00e8rie de caracter\u00edstiques concretes, que han calat en l&#8217;ideari col\u00b7lectiu i s&#8217;empren en la societat. En aquest apartat li farem preguntes directes a la cuina per a descobrir que, fins i tot si creiem saber qu\u00e8 \u00e9s la \u00abcuina popular\u00bb, \u00e9s primordial contextualitzar-la en base a certs criteris per a con\u00e8ixer millor qu\u00e8 defineix cada tipus de cuina.<\/p>\n<h3>Proposem diversos criteris principals per a descobrir tipus de cuina d&#8217;un cuiner o restaurant<\/h3>\n<p>Com ocorre en qualsevol entrevista, la clau per a obtenir la millor informaci\u00f3 \u00e9s fer a l&#8217;entrevistat les preguntes m\u00e9s pertinents. Sent, en aquest cas, la cuina la que ha de respondre a aquestes, plantejarem els que considerem els criteris principals (les preguntes), que ens permetran recon\u00e8ixer de la forma m\u00e9s clara possible els diversos tipus de cuina.<\/p>\n<h3>I si apliqu\u00e9ssim els mateixos criteris per a contextualitzar diferents elaboracions?<\/h3>\n<p>Acabem de tractar la q\u00fcesti\u00f3 de les elaboracions com a unitats amb caracter\u00edstiques pr\u00f2pies. B\u00e9, dons ara tractarem de contextualitzar-les amb els mateixos criteris b\u00e0sics plantejats per a analitzar els tipus de cuina.<\/p>\n<h3>Les elaboracions viatgen en el context culinari, transvasant-se d&#8217;uns tipus de cuina a uns altres i traspassant les fronteres que les definien a l&#8217;origen<\/h3>\n<p>\u00c9s curi\u00f3s observar com molts aspectes que van caracteritzar una elaboraci\u00f3 en el moment en qu\u00e8 va ser creada poden variar, si canvia el context en el qual aquesta s&#8217;elabora i consumeix. Les elaboracions poden crear-se associades a una mena de cuina concret, per\u00f2 s\u00f3n susceptibles d&#8217;adaptar-se a uns altres. Plantegem tres exemples molt significatius d&#8217;elaboracions en els quals aquesta mobilitat (o abs\u00e8ncia de la mateixa) queda perfectament reflectida.<\/p>\n<h3>Observem les elaboracions com a resultats: quines s\u00f3n les seves caracter\u00edstiques?, sobre la base de qu\u00e8 podem definir-les?, com sabem si s\u00f3n un snack, un plat o un c\u00f2ctel?<\/h3>\n<p>Les elaboracions s\u00f3n el resultat d&#8217;un sistema en el qual es donen processos i s&#8217;empren recursos, conjunt del qual moltes vegades adquireixen i hereten caracter\u00edstiques. No obstant aix\u00f2, per si mateixes, com a resultats, les elaboracions tamb\u00e9 posseeixen trets propis, que en molts casos ens han perm\u00e8s tipificar-les.<\/p>\n<h3>Quan l&#8217;estructura de l&#8217;oferta o proposta gastron\u00f2mica marca quina, quant i com es cuina: cuinar a la carta, per a un men\u00fa, per a un bufet\u2026<\/h3>\n<p>L&#8217;estructura en la qual s&#8217;organitzen les elaboracions (en una carta, en un men\u00fa degustaci\u00f3, en un bufet) deixa un marge de decisi\u00f3 determinat al cuiner sobre el que cuinar\u00e0 i al comensal o client sobre el que degustar\u00e0. A m\u00e9s, l&#8217;estructura de l&#8217;oferta t\u00e9 un gran impacte en les caracter\u00edstiques que s&#8217;associaran al sistema, al proc\u00e9s, als recursos i a les elaboracions resultants, perqu\u00e8 hauran de donar-se d&#8217;acord amb aquesta.<\/p>\n<h3>Cuinar per enc\u00e0rrec<\/h3>\n<p>Aquesta cuina funciona sota demanda concreta del client; \u00e9s a dir, el cuiner coneix per endavant quantes elaboracions o conjunts d&#8217;elaboracions ha de preparar, aix\u00ed com el moment en el qual el client les requereix.<\/p>\n<h3>Llavors, quants tipus de cuina podem trobar en un restaurant gastron\u00f2mic?<\/h3>\n<p>Un restaurant gastron\u00f2mic pot definir-se per una mena de cuina, molt marcat, si hi ha una caracter\u00edstica o un conjunt d&#8217;elles que representen el concepte d&#8217;aquest establiment. Per\u00f2 un mateix restaurant pot admetre en la seva cuina matisos i caracter\u00edstiques de diferents tipus, com es comprova si analitzem casos concrets aplicant criteris diferents.<\/p>\n<h3>El cuiner pot desenvolupar un estil propi i arribar a ser influent. Si s&#8217;uneix a altres cuiners d&#8217;estils similars, poden originar un moviment de cuina<\/h3>\n<p>Un estil de cuina \u00e9s una conseq\u00fc\u00e8ncia, generada quan el cuiner t\u00e9 una forma personal i marcada de fer i entendre la cuina, i \u00e9s capa\u00e7 de reflectir-la en els seus resultats. Un moviment sorgeix de la suma d&#8217;estils personals similars que es basen en una mateixa filosofia i van en una mateixa direcci\u00f3. Per la seva banda, les tend\u00e8ncies, les modes i les novetats en cuina s\u00f3n factors que es manifesten en les formes de consum, s\u00f3n presents durant un temps i tenen el seu reflex en els processos i els resultats culinaris.<\/p>\n<h3>Cuinem de tot o cuinem alguna cosa en concret?<\/h3>\n<p>No tots els cuiners cuinen tot tipus d&#8217;elaboracions o empren qualsevol t\u00e8cnica. La q\u00fcesti\u00f3 de l&#8217;especialitzaci\u00f3 \u00e9s essencial si parlem de cuinar, ja que ha generat camins professionals diferenciats i superconcrets per a molts cuiners, als quals es qualifica sobre la base de l&#8217;elaboraci\u00f3 en la qual s\u00f3n experts.<\/p>\n<h3>No totes les elaboracions s\u00f3n iguals ni compleixen la mateixa funci\u00f3<\/h3>\n<p>Encara que podem generalitzar dient que els resultats de cuinar s\u00f3n elaboracions, dedicarem aquest apartat a concretar les difer\u00e8ncies entre elles, en funci\u00f3 que siguin interm\u00e8dies, emplatades o que es degusten. Aix\u00f2 ens permetr\u00e0 parlar de la composici\u00f3, \u00edntimament lligada a aquestes.<\/p>\n<h3>\u00c9s la mateixa persona qui elabora un caf\u00e8 i un entrecot? Un vi i una sardina? Un pa i una cervesa? S\u00f3n tots cuiners?<\/h3>\n<p>La diferenciaci\u00f3 entre els usos del menjar i la beguda com a elaboracions ha afavorit que existeixin professionals que nom\u00e9s elaboren menjar o nom\u00e9s beguda, sent aquest criteri un dels quals m\u00e9s cuiners superespecialitzats ha generat, adquirint una import\u00e0ncia transcendental en el panorama de la restauraci\u00f3 gastron\u00f2mica actual.<\/p>\n<h3>El sabor com a generador de dos universos culinaris: el m\u00f3n dol\u00e7 i el salat<\/h3>\n<p>El gust b\u00e0sic predominant, dol\u00e7 o salat, ha portat a parlar de dos universos d&#8217;elaboracions diferents. Aquesta divisi\u00f3 no sols marca moments diferents en una mateixa degustaci\u00f3, sin\u00f3 que a m\u00e9s ha provocat que existeixin cuiners altament especialitzats, tant en el m\u00f3n dol\u00e7 com en el salat.<\/p>\n<h3>Es cuinen elements decoratius? Es mengen les decoracions?<\/h3>\n<p>Molt lligats a la cuina del m\u00f3n dol\u00e7, encara que no \u00fanicament, hi ha experts en la decoraci\u00f3 a cuina, que pot ser una part comestible de l&#8217;elaboraci\u00f3 o tractar-se d&#8217;un simple adorn de la mateixa.<\/p>\n<h3>Cuinar respectant el protagonisme d&#8217;un producte principal en l&#8217;elaboraci\u00f3 que es degusta: la cuina de producte<\/h3>\n<p>El concepte encunyat com a \u00abcuina de producte\u00bb fa al\u00b7lusi\u00f3 a dues q\u00fcestions molt concretes, sobre les que es consolida la seva filosofia: el nivell d&#8217;elaboraci\u00f3 del producte (mai massa elaborat) i el protagonisme d&#8217;un producte sobre els altres en l&#8217;elaboraci\u00f3 que es degusta (pres\u00e8ncia d&#8217;un de principal determinant, que pot anar acompanyat d&#8217;altres).<\/p>\n<h3>Qu\u00e8 \u00e9s en realitat \u00abnatural\u00bb a la cuina? Alguns aclariments b\u00e0sics<\/h3>\n<p>La \u00abcuina natural\u00bb \u00e9s un altre concepte creat amb unes implicacions concretes en l&#8217;ideari col\u00b7lectiu. Per definici\u00f3, seria natural tota cuina que empr\u00e9s productes naturals (no artificials), q\u00fcesti\u00f3 extraordin\u00e0riament complexa, que tractarem en aquest apartat i que ens permetr\u00e0 obrir un debat sobre qu\u00e8 \u00e9s \u00abnatural\u00bb.<\/p>\n<h3>Servir segueix a l&#8217;acte de cuinar: actors, tipus i temps del servei<\/h3>\n<p>La tasca que desenvolupen els professionals que formen part del servei \u00e9s fonamental per a la cuina.
