En primer lloc, posarem en context el concepte per a comprendre que els PE s\u00f3n, en definitiva, elaboracions que realitza la ind\u00fastria aliment\u00e0ria i de les begudes, i les compararem amb les pr\u00f2pies que realitza un bartender en una cocteleria.<\/p>\n\n\n\n<p>Posteriorment, i despr\u00e9s d&#8217;una breu pinzellada sobre el seu origen i evoluci\u00f3, proposarem un estudi sobre els principals criteris que permeten classificar els PE des de l&#8217;enfocament de la cocteleria, analitzant aix\u00ed quin \u00e9s el seu valor per al bartender que els utilitza en elaborar o crear les seves receptes.<\/p>\n\n\n\n<p>Finalment, establirem una taxonomia que ens permeti estructurar correctament tots els PE sobre la base dels criteris essencials que els diferenci\u00efn en diferents agrupacions b\u00e0siques que condueixin a una millor comprensi\u00f3 de les seves caracter\u00edstiques, comen\u00e7ant pel seu estat de la mat\u00e8ria i seguint pel seu \u00fas habitual com a beguda o menjar, el seu contingut o no en alcohol, aix\u00ed com el PNE principal del qual provenen i la t\u00e8cnica d&#8217;elaboraci\u00f3 definit\u00f2ria aplicada.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>En aquest cap\u00edtol ens centrarem en els productes elaborats, les sigles dels quals seran PE.
