Sense ells, no seria possible presentar l&#8217;oferta gastron\u00f2mica que el comensal degustar\u00e0.<\/p>\n\n\n\n<p>Per aix\u00f2 \u00e9s necessari analitzar com s&#8217;obtenen. En aquest cap\u00edtol parlarem de la producci\u00f3: de com hem apr\u00e8s de la naturalesa i de com reprodu\u00efm els seus processos, per\u00f2 tamb\u00e9 de com hem creat formes noves de produir i, per conseg\u00fcent, nous productes.<\/p>\n\n\n\n<p>Posarem l&#8217;accent en com \u00e9s la producci\u00f3 dels productes no elaborats destinats a la restauraci\u00f3 gastron\u00f2mica. I ho il\u00b7lustrarem amb exemples de com es reprodueixen les diferents esp\u00e8cies d&#8217;organismes en cada m\u00f3n, seguint la taxonomia que plantegem en el volum II, <em>Productes no elaborats. Taxonomia.<\/em><\/p>\n\n\n\n<p>Coneixerem els millors escenaris i el paper dels professionals que produeixen, creen, reprodueixen o obtenen els productes no elaborats que comprem, cuinem i mengem.
