En aquest cap\u00edtol es descriuen els principals objectius i finalitats de la compra, les caracter\u00edstiques que presenta i els condicionants que podrien alterar els processos implicats.<\/p>\n\n\n\n<p>Els processos de la compra els realitzen d&#8217;una a diverses persones. Per a aix\u00f2, aquests actors necessiten posseir uns coneixements, qualitats i actituds concrets: con\u00e8ixer el producte, les seves caracter\u00edstiques organol\u00e8ptiques, temporada d&#8217;obtenci\u00f3, origen, distribuci\u00f3, composici\u00f3 i maneres d&#8217;emmagatzematge i conservaci\u00f3. D&#8217;altra banda, han d&#8217;estar en contacte directe amb els prove\u00efdors, productors o comerciants, als quals sol\u00b7licitaran els productes de m\u00e0xima qualitat i exigiran que es compleixin els terminis de lliurament, les quantitats, els preus acordats, etc.<\/p>\n\n\n\n<p>De la mateixa manera, \u00e9s important disposar d&#8217;una actitud proactiva que promogui la cerca incessant de productes: descobrir, investigar i explorar nous productes, entorns, gastronomies i cultures per a ampliar i diversificar els productes \u00fatils en el restaurant.<\/p>\n\n\n\n<p>Coneixerem els condicionants de la compra tant intr\u00ednsecs com aliens al restaurant, i els recursos necessaris \u2013econ\u00f2mics, personals, temporals, t\u00e8cnics o f\u00edsics\u2013, aix\u00ed com els processos implicats per a la seva correcta execuci\u00f3.
