In this brief chapter we will comment on the perspective taken to approach this work. Previously we defined the \u00abwhat\u00bb, now we go on to contextualise the \u00abfrom where\u00bb, or, in other words, the biases and limitations implied in our way of understanding cocktails. We are fully aware that this book is written in a very specific time and geographical location that condition our way of understanding the discipline as a whole. Consequently, in these pages we also set out which other approaches and sensibilities could be possible, those which have received less attention.<\/p>\n
