Sin embargo, en el momento en el que trabajan de cara al cliente deben adaptarse a la cultura profesional de la empresa. Este cap\u00edtulo permite comprender y reflexionar sobre estas formas y conductas. Existen innumerables condicionantes que moldean nuestro comportamiento, entre ellos destacan el entorno socioecon\u00f3mico de la empresa, la forma de trabajar impuesta por el restaurante, la edad del trabajador, nuestras necesidades de autorrealizaci\u00f3n o nuestras propias limitaciones.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">El sumiller, como ser humano, dispone de un cuerpo y una mente con la que realiza procesos cognitivos como sentir y percibir, recordar, concentrarse, hablar o pensar de manera inteligente. Gracias a su persona, y teniendo en cuenta los condicionantes, desarrolla su d\u00eda a d\u00eda con mayor o menor \u00e9xito.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">En este cap\u00edtulo se estudian las variables que podr\u00edan moldear el comportamiento del sumiller: los instintos, las capacidades (cognitivas, motoras, afectivas), las actitudes en el trabajo, su emocionalidad, los valores, el car\u00e1cter y temperamento, las experiencias pasadas, el conocimiento adquirido, la cultura general, la propia filosof\u00eda y sus h\u00e1bitos y costumbres, entre otros. Estos factores provocan que cada sumiller act\u00fae de manera distinta. Sin embargo, todos deber\u00edan regirse por un c\u00f3digo \u00e9tico, un conjunto de normas y costumbres en las que basar su comportamiento y destacar dentro del restaurante.
