1997–2011: A time of great change

Already well known in Spain and France, elBullirestaurante was awarded its third Michelin star in 1997. This distinction immediately gave the restaurant international recognition and forced it to adapt.

It was time for a new approach. Both the team and its resources had reached a high level of professionalism, and they worked on the systematisation of their creative processes to consolidate the restaurant’s own language.
