
With more than 1,800 different wines making up the wine list, the sommeliers were able to propose a pairing catered to each diner’s personal tastes, while adapting them to the gustatory and aromatic variety of the elaborations on the tasting menu and maintaining the required pace of service (with its more than 45 courses).
THE DIGITAL WINE LIST
In 2003 and 2004, an experimental project was carried out to digitise the wine list. Through a user-friendly interface based on a series of questions and answers, the programme analysed each individual’s preferences and guided them to their ideal wines.
However, diners became too distracted from the overall gastronomic experience, and its use was eventually abandoned. Nonetheless, it was used a tool to communicate the offering in other gastronomic spaces, such as elBullihotel.
