This apparently simple question is where it all began. It was the starting point for what would develop into the Sapiens methodology, and it was this approach that would lead to the creation of Bullipedia, the encyclopedia for the Western fine-dining sector. Both projects are essential for the fulfilment of elBullifoundation’s mission, and they are explained at the end of the visit in the outside area of the exhibition.

What Is Cooking offers a rejection of dogmas through a process of reflection and questioning that clearly shows cooking to be a vast and complex reality. It demonstrates that, between the black and the white, there are many different shades of grey in which the reality of things can be found.

Through a process of investigation that seeks to challenge the commonly held ideas that we take for granted, this installation is a direct invitation for you to reflect on your own idea of what cooking is.

The resulting research and deep reflection have also led to one of the volumes that make up Bullipedia. It is a compilation of the interconnected knowledge that is necessary for answering this question. This project was carried out to broaden the limits of our understanding and decision-making process in determining what and how to cook.

What Is Cooking (Bullipedia): book information
What Is Cooking is a volume of Bullipedia that offers a holistic view of the action and process of cooking, and of its result, cuisine. At its base is the Sapiens methodology, which was created by Ferran Adrià and elBullifoundation from the perspective of systematic thinking. Given this book’s intent and cross-disciplinary content, readers will find in it repeated references to the products, elaborations and cuisines that are dealt with in other volumes in this encyclopedia. Although it seems that we had managed to understand the formula in which product, technique and tool, together with a source of energy, produces a result, What Is Cooking provides an opportunity to question commonly held ideas about this action, which humans have practised since Palaeolithic times. To do this, we studied cooking, from its very origins, to determine its boundaries and gauge its possible interpretations.

We started with the premise of Sapiens – to establish an order for better understanding – so that the narrative offered to the readers of What Is Cooking would allow them to immerse themselves into this enormous and complex world, one part at a time. Only in this way, ‘by bringing order to cooking’, has it been possible to give attention to each of the different concepts, elements and characteristics that make up this reality. The aim is to understand them as part of a whole that is replete with options and open to innovation.

At the core of this investigation, in line with Bullipedia, is the cooking that defines the Western fine-dining sector, the focal point on which this encyclopedia revolves. However, answering the question that gives this volume its title has required including the contexts, views and possibilities that result from broadening these horizons and opening new perspectives to us. For this purpose, we have also included the roles, times and scenarios in which cooking takes on other meanings beyond the scope of the fine-dining sector, along with those that are an inherent part of it.
