Theory of culinary evolution, by Ferran Adrià

This installation is the ‘Theory of Culinary Evolution’, by Ferran Adrià. Through his research, conducted in collaboration with anthropologists, he has established a theory on the beginnings of cooking, with the understanding that it may have coincided with, and been a determining factor in, the early development of humanity.

These drawings, which have been exhibited in different museums around the world, allow us to understand the importance of ‘respect for the past’ in the elBulli corporate and organisational culture. They also illustrate the importance of knowing history in order to advance and break new grounds.

- What is cooking?What is cuisine?
- From the Big Bang to the dominance of mammals.
- From the first hominids to the missing link, Homo sapiens and the Neolithic period.

Light is shed on these questions in this series of drawings used by Ferran Adrià as an instrument for work and reflection, and as a record.

This is FerrAn Adrià’s experience

It would have been preferable to draw them more realistically, but I’d never been taught how to draw. So, I began drawing without artistic ambitions, using what I had at hand, in the early hours of the morning. My intention was to build an account on the theory of culinary evolution. This was necessary because in order to answer the question ‘what is cooking?’, our team had to answer the equally important question ‘when did cooking begin?’

Ferran Adrià’s long process of investigation and reflection resulted in a collection of 114 drawings, all of the same size, made on elBullirestaurante letterhead stationery in different years.

In addition to lead pencil, they were drawn using colouring pencils, coloured markers, watercolour and oil paints, with cocktail sticks and cotton buds used in place of a brush.

Dating from 2013, they were subsequently exhibited at the The Drawing Center, New York; the ARCO International Contemporary Art Show, Madrid; the Museum of Contemporary Art Cleveland; the Espacio Fundación Telefónica in Madrid, Lima and Buenos Aires; the Nelson-Atkins Museum of Art, Kansas City; the Minneapolis Institute of Art; the Marres House for Contemporary Culture, Maastricht; and Museu Picasso, Barcelona.

On 31 March 2022, a collection of NFTS associated with a series of 114 drawings was launched, in collaboration with Telefónica, elBullifoundation’s technological partner.

Each NFT is a unique digital copy of a drawing and its history. It is accompanied by a digital certificate of authenticity registered on the blockchain, which proves ownership of this digital work.

NFTs, non-fungible tokens. These are cryptographic assets that are certified as unique and unreproducible.

The collection is traded through the elBullifoundation website or directly on OpenSea, the most widely used marketplace for the exchange of NFTs. The cost of each NFT is 0.1846 Ether (Polygon), and all proceeds raised will be donated to the Foundation’s missions.

In order to enhance the experience of users interested in purchasing these NFTs, Telefónica has developed a 3D space to visit the collection, recreate the physical environment in which the drawings are displayed of elBulli1846. This immersion in the metaverse has been connected to OpenSea to complete the purchasing process.

The purchase of each NFT in this collection offered the added value of granting exclusive access to elBulli1846 before its official opening and a preferential right of purchase for the next collection.
