
In the 1990s, creative cooking underwent a major change. For the first time in what was a relatively secretive world, chefs realised that cooking would evolve more quickly if everybody shared their discoveries as they happened.
During this period, this exchange took the form of regular courses and conferences. However, there had already been some precedents in the late 1980s.
It all began with Salón Gourmets, which first took place in 1987. It was followed by the conference Lo Mejor de la Gastronomía, which was a continuation of the Vitoria Gastronomic Conference held at Zaldiaran restaurant, as well as the Gastronomic Forum of Vic, both starting in 1999.
In 1997, the first Gastronomic Summit was held in Madrid. It was the forerunner of Madrid Fusión, which began in 2003 and over time has become the most important international gastronomy conference.
This was how elBulli and a whole generation of committed chefs and restaurateurs have forever changed the way in which thousands of professional think, always with humility and respect for tradition, sharing everything they did with their contemporaries both inside and outside their countries. This dialogue, this quest for improvement, continues with the same goal of paving the way for future generations.
