This 130-page chapter could be a book in itself. In the chapter are outlined the 24 categories that we consider to be most relevant to understanding wine from whatever angle. All categories are divided into 117 classification criteria that allow us to order and categorise the wines.

Wines according to their country of origin, region, geographical classification, grape variety, climate, yield, flavour and price. These are just some of the examples. Why have these categories been chosen and not others? It is due to their relevance and, primarily, because they are frequently used in high end restaurants, thus forming part of the day-to-day life of sommeliers and wine professionals.

This final chapter of the book concludes with 20 wines of reference that will allow us to use and check the aforementioned classifications.
