LINKING COCOA AND CHOCOLATE TO NATURE AND SOCIETY

In this chapter we explain the relationships that have been established between, firstly, nature and cultivation and, then, between cocoa, chocolate and society. The domestication of the plant, the economy, science and technology are just some of the areas that are addressed. We undertake an analysis of each and examine the connections between them, sometimes in great depth, at other times more superficially, in order to have a global vision of our object of study.
