THE QUALITY OF THE WINE

Following the unanimous assertion from our celebrated group of sommeliers that quality is the most important factor in deciding on a wine, we felt it necessary to devote a whole chapter to exploring this concept. What is quality? Why are there wines that are considered better than others? Is it just about taste, or do brand, exclusivity and price also influence the perception of quality?

We explore concepts such as the level of influence that expectations of quality have and conclude by proposing a revolutionary “mathematical formula for quality” that addresses why wine critics, consumers, sommeliers and laboratories have different perceptions of quality.

Finally, this formula will be applied to a wine created by Benjamín Romero that, after sampling, arouses the most satisfactory sensations of well-being, pleasure, tranquility and joy.
