CHOCOLATE AS AN ELABORATION

Chocolate is an elaborated product which, in turn, can be a final product or part of another elaboration.

In this chapter, we again use the classification tool to gain an understanding of chocolate. Then we turn our attention to chocolate elaborations, and the techniques and tools that can be used.

This is a good time to discuss chocolate tasting; how it is done and how to interpret the sensory profiles of chocolate.
