When were cocoa beans first discovered, and what were the first elaborations made with them? Knowing this will enable us to understand the development of the processes, techniques and tools that have accompanied – and continue to accompany – cocoa and chocolate over the years.
We will also look at the way the transmission of knowledge has changed, from the first books to the nature of the latest publications.
