PLAGUES, WORLD WARS AND THE REVIVAL OF WINE (1858 – 1976)

This chapter is characterised by the arrival in European vineyards of the three main pests, and the devastating consequences of the World Wars. Widespread industrialization causes a reaction in the form of the emergence of organic farming. We see the birth of modern oenology with Émile Peynaud and understand how wars and inequalities shaped the wine market until the creation of the first cooperatives. The gastronomic context will be provided by F. G. Dumas with his Almanach des Gourmands, while temperance movements and Prohibition marks the drinking experience in North America.

We conclude the book by talking about the globalisation of high quality products thanks to the Judgment of Paris. We also pay tribute to Alain Senderens, the most skilled  promoter of contemporary food and wine pairing.
