CHAPTER 1
Although this volume is dedicated to cocoa, we believe it important to define both cocoa and chocolate and look at how they are conceived in the various professions they are used. What is the first thing we think of when we hear the words cocoa and chocolate? What is the origin of both terms? Where do we consume them? These are some of the questions we address in this chapter.
An essential part of this chapter is our lexical analysis. This will help us to understand the transversal and intrinsic terms related to our object of study.
