INTRODUCTION
To understand the methodology used in this book, we will first try to explain what Sapiens is and how it has been applied to our object of study: cocoa and chocolate. The introduction presents the project in the broad context of Bullipedia, the multi-format encyclopaedia of the gastronomic restaurant business in the Western world.
The aim of Cocoa and Chocolate Sapiens is to analyse cocoa and chocolate from a holistic perspective, studying all the processes and systems in which they are involved.
