NEOLITHIC (10,000 – 3500 BC)

Entering the cradle of civilization, we find a crucial development for the future of wine: the birth of agriculture and livestock. Domestication of the vine also takes place thanks to this new knowledge. However, the origin of domestication has been an enigma to researchers. We present numerous theories in this regard, concluding with what seems to be the consensus theory, based on a study published in 2023, which places the year 9000 BC as the year that Vitis vinifera sativa appeared. In addition, we study the first vessels used in the fermentation of wine, examining the first and second oldest wine fermentation vessels according to chemical analysis. We also take an imaginary trip back in time so as to drink from Neolithic ceramic vessels.
