A comprehensive, all-encompassing project undertaken by a team of multidisciplinary experts from Lavazza through the application of the Sapiens methodology created by Ferran Adrià and elBullifoundation. This same approach and methodology has been employed in all the volumes that make up Bullipedia.

The work is dedicated to all coffee lovers and, particularly, to those whose professional activity is coffee centred. Of special interest to anyone whose entrepreneurial philosophy inspires them to explore and connect knowledge, so that they can fully understand this fascinating world in all its complexity; from coffee plantations to harvesting, from industrial processing to the experience of drinking coffee in a certain time and place.

What is coffee really: Is it a plant? A seed? A social act? When and how does it become an edible product? What is its role in western societies? And in the gastronomy industry? What does a professional with an entrepreneurial attitude need to know in order to start/manage a business where coffee plays an important role?

At Coffee Sapiens, we adopt a scientific approach to analyse coffee, incorporating numerous academic and social disciplines, permitting us to trace its historical evolution and gain a 360º understanding that provides answers to all those and many more questions.

A love of coffee can result from an understanding of it.

In this section is a short summary of each chapter of the book

The journey that we set out on together with Lavazza over 20 years ago has led me to push the boundaries of experimentation, enough to be able to include coffee in the Sapiens methodology. I was intrigued by the idea of being able to take coffee beyond the conceptions that have become deeply entrenched over centuries. It is a philosophy similar to the one created through the elBulli experience […] and shows how coffee can also be utterly original and surprising, pushing research towards borders that we cannot yet imagine.

Ferran Adrià

When is a cup of coffee so much more? When it’s the subject of an encyclopaedia created by Ferran Adria’s elBulli Foundation, with Lavazza… A deep dive into the history, consumption practices, production techniques and myriad varieties of coffee… Culinary professionals and coffee fans alike will enjoy the chance, via the book, to approach the worlds of coffee and gastronomy from a practical and intellectual viewpoint.
