In 1987 Ferran Adrià attended a masterclass given by Jacques Maximin, then chef de cuisine at the Chantecler restaurant situated in the Negresco Hotel in Nice, in which Maximin was asked the following question: “What is creativity”?
The legendary French chef answered without a moment’s hesitation: “Creativity means not copying“. This apparently simple insight became the principle that guided Ferran Adrià’s future philosophy as a chef.
