To understand food delivery, we should not limit ourselves to just analysing restaurants and aggregators. There are many actors involved in the food delivery ecosystem, and many different roles. For example, we must not overlook the entrance of manufacturers and large distributors into this market, competing with food delivery from the restaurant business. We must also take into account last-mile services for delivery, infrastructure managers for dark kitchens, suppliers of packaging, technology, management tools, digital services and marketing, and newly emerging businesses such as the metasearch engines that compare delivery platforms. All of these together make up a complex ecosystem. Moreover, for this study we have had the opportunity to interview more than fifty businesses, which provides valuable testimony of their experiences and vision for the sector. This has allowed us to establish connections, solve doubts and understand much more clearly the operation and possibilities of food delivery.
